North Sea Chef

At Melt, you can taste the love for the sea. Chef Jan Audenaert was named Fish Chef of the Year in 2020, an acknowledgment of his craftsmanship and respect for the product.

We are also proud ambassadors of the North Sea Chefs. This means we are committed to sustainability by working with underappreciated fish species and bycatch from our own North Sea. We need to learn to eat what the fishermen catch, rather than just having them catch what we want to eat.
